Definition

A concentrated, volatile aromatic compound extracted from plants by steam distillation or cold pressing. Essential oils are responsible for the distinctive scents of lavender, eucalyptus, peppermint, and rose, and are used in perfumery, aromatherapy, and as food flavoring agents.
