Pachyrhizus erosus, known as jicama or yam bean, is a trailing to climbing vine in the legume family native to Mexico and Central America, now widely cultivated throughout the tropics. It is grown primarily for its large, starchy, crisp turnip-shaped taproot, which is eaten raw or cooked and remains crisp even after cooking. The aerial parts including seeds and leaves contain the toxic rotenoid compound rotenone and should not be consumed.
