Definition
A viscous, gelatinous polysaccharide produced by seeds, roots, bark, and leaves of many plants. Seed mucilage (chia, psyllium, flaxseed) forms a gel when wetted, aiding seed-soil contact and germination. It is used medicinally as a demulcent and in food as a thickener.
