Definition
Plant glycosides that form stable, soapy foams when mixed with water. Saponins occur in soapwort, soapbark (Quillaja), yucca, and many legumes. They deter herbivores and are used commercially as emulsifiers, adjuvants in vaccines, and in natural cosmetics.
